Cola Chicken Wings

We had a potluck lunch in school on Wednesday, instead of bringing cake this time I brought some chicken wings cooked with Coca Cola. Found this recipe while flipping through cookbooks at Popular many months ago, it's our favourite wing recipe on the dining table now............

Ingredients :

1kg chicken wing, cut into 2 pcs, discard wing tip
20 pcs shallots, peeled & smashed
1 big pc ginger, "
2 cans coca cola
1 Tbsp dark soya sauce *
2 Tbsp Hoisin sauce *

Heat oil in a sauce pan till almost smoking, add shallots & ginger, cook till almost charred add wings & continue cooking until wings are browned. Add coco cola, dark soya sauce & hoisin sauce into pan, bring to boil over high heat, turn down to medium flame, continue cooking, uncovered for about 20 mins or until sauce is almost dry.
Drain & place wings into a baking pan, lined with foil, drizzle with 1 1/2 Tbsp light soya sauce & add 30g butter, on top of the wings. Bake at preheated oven of 190 degree for about 20mins or to your liking.

* I added the extra dark soya sauce & hoisin sauce on my own. To cook the shallots & ginger till almost charred really bring out the flavour, if you are concerened about additional oil, omit the butter. I usually trim all fats off the wings & bake my wings longer than the specific time cos' we like our wings really dry .

My fiance does a similar chicken dish with 7up & Lingham sweet chilli sauce :)

Does the sweetness in 7up caramelize the wings like cola ?

Yeap the 7up has the same effect & by the time its cooked you can hardly taste the 7up :)
