Finally, waited for my mangoes to very very ripe, with black spots on the skin, I have used 10 mangoes, a combination of Harum Manis & another unkwown species which has a fantastic aroma but not as sweet as Harum Manis.
Mangoes, blended into puree
Sugar syrup, cooked with 2 cups of water & rock sugar added to individual taste
1 cup sago, cooked in boiling water till transparent, plunge in cold water & drained
1 small pomelo, peeled & sacs loosened into small pcs
I did not use any milk or cream like some recipes as we like the pure taste of mango in our dessert. I pureed 9 mangoes & cut the other into cubes. Place the mango puree, mango cubes, cooked sago & pomelo sacs into a large bowl, adjust consistency with the rock sugar syrup, we like our dessert slightly thick, so I won't dilute the mango mixture very much. How nice to be enjoying all the goodness of mangoes in a bowl, yummy...............
