Lychee Cheesecake


I've got a few enquires asking me if I make any lychee flavoured cake. I think it's a good idea as fruit flavoured cakes are always popular. So lychee has always been on my mind when it comes to new flavour. I've been busy with baking so weeks after weeks I've put this aside.

Well, it's been quite a while since my last new cake, lemon curd, was introduced. In fact my free time to try out this lychee cheesecake was this week when the power supply got interrupted many times. Since I couldn't do anything but just wait for the power to return, I could really sit down to think about this cake.

Back to the cake, I want to keep it light & refreshing. So the bottom part will not be the the same rich biscuit & butter crumbs, instead it'll be a layer of almond (pure extract) sponge, the filling will be blended lychee fruit with cream cheese, whereas the topping will be a layer of lychee jelly with lychee fruit.

Chicken Pies

I spent the whole morning of Wednesday making chicken pies for M. She tried my pie at a friend's house & asked me to make a batch for her too. I made my shortcrust pastry from scratch, with butter of course. I know shortening make a crispier pastry but nope, I won't sell what I don't eat. My pies are frozen once made so you only bake it when you're having it.


These are bigger pies that another friend ordered last month. What M ordered was the smaller ones, will post the picture of the smaller ones once I have it.


The ingredients in the chicken pie are usually chopped poached chicken breast, onion, garlic, frozen peas (Wattie's, not those from china which are still rock hard even after boiling !), canned button mushroom. M wanted fresh ingredients for her pies so I omitted the canned mushroom & frozen peas, added some chopped leeks, carrots & potatoes.

Christmas Baking





I hope everyone had a great Christmas this year !

Well, even though there's the economy crisis being mentioned everywhere, the town was still buzzing with shoppers buying Christmas presents & there was traffic jam everywhere the week before Christmas ! On Christmas eve, TH & Consfood were packed with people collecting their turkeys & other delicacies. We didn't have turkey. I didn't have time & it was not so convenient to be cooking at home this year ! Instead we had a simple dinner at Shikai restaurant, followed by coffee at SR.

I was baking non-stop from the time I woke up in the morning on 22nd. This went on for the next 4 days, even on the 25th. It was really tiring & I could still feel the fatigue now, even though I've just woke up from my nap ! But it was rather fun, getting everyone invloved in my Christmas baking, from washing up, to decorating & packing !

For the past 3 days, 72 Christmas cookies, 5 fruitcakes, 24 log cakes, 10.5 kgs of chocolate cake & 12 loaves of stollen bread were delivered from my little bakery. I'm really glad that my delicacies were able to grace the dining table of some people.

If not for the blessings & wisdom from God, this will not happen...........

Cookies Cookies !

This post is supposed to be published last night after I finished baking. By the time I sat on the computer, it was 10pm. After uploading the image, I was already dozing off........

I've started my Christmas baking on Monday, mostly fruitcake & cookies. I love the aroma that lingered in the kitchen when the fruitcake was baking, once a year. Frankly, I do not fancy fruit cake but am falling in love with the aroma !!

Oh, talking about cookies, I baked over a 100 pcs & we (hubby, myself, CJ & JF) spent lunchtime on Mon & Tue decorating & packing them. I do not want the hardened icing to fall off so I've packed each cookie individually, that took me more than an hour, on my own, because hubby had to get back to the office & the girls were only interested in the decorating part !

I couldn't find any mini M&Ms in any supermarkets so I've got to make do with cachous. CJ's little fingers came in handy when sticking them to the cookies, mine were too clumsy.

From the start, the girls had been asking if they could have their own cookies for decoration so I put aside 2 cookies for each of them, JF was so excited when it was her turn. She must have used too much icing on the cookies because when she was eating them I saw her scraping the icing off !

Christmas Cakes



For Christmas this year, I'll be baking the usual fruitcake, logcake, stollen bread & cookies.

This year, my logcake flavour will be chocolate dark cherry. It's chocolate sponge filled with chocolate fudge, studded with pitted dark cherries & covered in chocolate ganache. The weight of a logcake will be 1kg.

Designer & I spent our lunch time making some decorations using sugar paste. I've long wanted to make holly leaves & berries but couldn't find the holly leaf cutter until I saw it last year after Christmas, so I've waited 1 year for this !

Black Sesame Sponge Cakes


A new spongecake flavour. I've made some changes to my honey sponge cakes & turned them into black sesame sponge cakes. I've used roasted ground black sesame for these sponge cakes. They're so aromatic, it was a hit with hubby & the girls ! These goodies are going to be in my list of pastries.........




A chocolate cake made yesterday for 13 year-old Randall. His mum wanted a jersey with his name & age on it.

Since the girls started their summer holiday, I have been getting up later & later each day (lazy mummy!) Today it was 6.45am. After having breakfast with hubby, I started my baking at 7.30am.
The orders today are all little buns, muffins & cakes. I've prepared the bread dough for the cheese buns yesterday afternoon, after the 1st proving, I divided the dough into equal size balls & refrigerated them to be baked this morning. While the buns are returning to room temperature & proved for the 2nd time. I whipped up a batch of chocolate chips muffins. Well the timing is just right, when the muffins are done the dough will be ready to be sent into the oven too. While the muffins are baking, I prepared the batter for the honey sponge cakes. It's good to have 2 ovens so my baking & waiting time are cut down (the electricity bill comes last !). After the muffins are done, the buns & honey sponge cakes are sent into both oven respectively ! By 9.30am, all the goodies were done. While they were cooling, I prepared the cotton cheesecake batter for 3 oval loaves that a new customer (heehee) ordered, they were sent into the oven at 10.15am , that's why now I'm here, posting while those loaves are baking in the oven, got to run now, they shld be ready soon...........

Durian Puffs



Couldn't get enough of durian lately, the aroma is still lingering in my kitchen, luckily hubby & the two girls are great fans too, I remembered when the girls were little, they stayed away each time they see durians, now they're grown to like them, especially CJ !

Had an order for 2 boxes of durian puffs today. Each box contains 20 pcs of mini choux pastry puff filled with pure blended durian & the filling is piped into the puff, taste great when frozen, like eating ice-cream............

Durian Swissroll



I was up at 8.30am yesterday, which is considered very late for me cos' I'm an early riser, usually 4.45am when I go for my morning run, Sundays are usually around 7am ! After breakfast & running some errands I started my baking, had a few orders yesterday so was hustling around the kitchen till 5pm, it was only after that then I have the time to go to Giant pick up the usual stuff like milk, yoghurt, cheese slices for my girls then dinner........

I had few friends asking about durian few weeks ago, waited till yesterday that I managed to get hold of them from my usual supplier, managed to 'dismantle' them & blend them into the yummy filling for my swiss rolls as I have an order for 4 rolls today. The filling is made from pure durian flesh blended with whipped double cream, no flavour & the roll is 9" in length.
I managed to take a photo of a swiss roll & the cross-section of it, pardon me cos' I'm not a good photographer ....................

Chocolate Chip Cookies


A friend ordered a batch of chocolate chip cookies & mini vanilla cupcakes for a gathering tomorrow. My kitchen was filled with the aroma of cookies & cupcakes while the oven was working hard today. I had to resist the temptation of popping these little goodies into my mouth, as I always make extra for my girls, I did manage to keep to just 1 cookie though ..........
